Easy Banana Berry Muffin Recipe

Yummy recipe – easily converted to a Gluten, Dairy and Soy Free snack!

Ingredients

2 ½ cups self-raising flour

¾ cup milk

1 egg, lightly beaten

1 cup macadamia oil

¼ cup brown sugar (or Xylitol for sugar free or you can just omit altogether)

1-2 over ripe bananas – mashed

1 teaspoon vanilla extract

1 cup fresh or frozen berries of choice

 

Method

 

  1. Preheat oven to 190°C/170 fan-forced. Line a 12 hole muffin pan with paper cases.
  2. Combine the flour and brown sugar in a bowl. Make a well in centre.
  3. Add milk, egg, oil and vanilla. Mix until just combined.
  4. Gently mix in mashed banana. Fold in berries.
  5. Spoon mixture evenly between paper cases. Bake for 20 to 22 minutes or until golden and just firm to touch. Stand in pan for 5 minutes. Transfer to a wire rack to cool.

 

Tip: For a crumble topping: combine 1 tbs brown sugar, 3tbs rolled oats, 1 tbs plain flour, 1 tbs butter (or spread) rub together with finger tips until combined and sprinkle over muffins before placing tray in the oven.
